Colombian Chicken Hot Pot (Sudado De Pollo)
The “Sudado de Pollo” is such a traditional home meal that even Colombian/Australians know how to cook
it. So easy to make and delicious to eat. Serves 4
- 8 Skinned Chicken Drumsticks

- large Brown Onion
- 2 large Ripe Tomatoes
- 1 Capsicum (Red or Green ok)
- 6 Peeled Potatoes diced
- 1 tblesp Oil
- 1.5 tsp Cumin Powder
- 1/2 tsp Imitation Saffron
- 1/2 tsp Garlic Powder
- Salt and Pepper to taste
Slice the onions, tomatoes and Capsicum into long strips. Fry then in a large pot with the seasoning or Cumin, Saffron, Garlic Powder and Salt n Pepper. After you have browned the “guiso” and the tomatoes have broken down, add the chicken drumsticks (skinned) to the pot. Allow to simmer for about 5 minutes on medium heat. Add the diced potatoes, lower the heat and place the lid on the pot. Allow to
simmer for about 40 minutes, checking regularly that it doesn’t dry out. Serve with warm white rice.
